Kelli's Smores Dip

 

Kelli brought this to my husband's 40th bday bbq.  It was so yummy!  


Mix in baking dish:

1 12 oz bag Hershey's Semi-Sweet chocolate chips

1 12 oz bag Nestles dark chocolate morsels, 53% cacao 

Place 1 bag mini marshmallows on top.

Bake in 450 degree oven for 10-12 minutes.  Check oven at 10 minutes to be sure marshmallows don't burn.  

Serve with graham crackers.

Symona's Salsa

1 can diced tomatoes

1 can Rotel (mild)

Roma tomatoes, chopped (added 1 or so to the tomatoes above, can also use instead of diced tomatoes)

1 bunch cilantro, chopped

1 medium onion, chopped

1-2 limes to taste (I used 2 last time)

minced garlic, 1-2 tsp (I used about 1 last time)

salt, 1 tsp

pepper, about 1/2-3/4 tsp

cumin, about 1 tsp

1 jalapeño, diced


Chop and mix!  Super delicious!

Buffalo Chicken Dip



Oh my gosh, this stuff is BOMBBBBB!!!!  We had it at a friends house recently and it was so good.  Serve with tortilla chips.

1 package  (8 oz) cream cheese, softened
1/2 c Hidden Valley Original Ranch Dressing
1/2 c Frank's RedHot Original Cayenne Pepper Sauce
2 c cooked chicken
1/2 c crumbled bleu cheese (optional)
(I think when we had it they added in about 1/2 c cheddar cheese)


Combine all ingredients in a 1 qt baking dish.  Bake at 350 degrees for 20 minutes until hot.  Makes about 4 cups dip.  I believe you can also put it in a crock pot.

Spicy Mexican Dip

Very delicious dip right here! We had it at Bunco last night.


2 sticks cream cheese (8 oz each)
2 cans Rotelle
1 can green chills
1 jalapeño (or less, depending on how hot you want it.  Try doing 1/3-1/2 first!)


Simmer rotelle, chillies and jalepeno in a large sauce pan.  Cube cream cheese (1 inch cubes) and stir until melted.  Serve with tortilla chips or bread.  Warning.  Super addicting.

Pumpkin Spice Carmel Dip

4 oz cream cheese, softened
1/2 c powdered sugar
1/2 c canned pumpkin
1/3 c carmel ice cream topping
1/4 c sour cream
1/2 tsp nutmeg (sounds like a lot to me…)

Directions:
Beat cream cheese and powdered sugar together.  Gradually mix in other ingredients.  Beating until smooth.  Mix well.  It gets fluffier as you mix.

Kim Chee Dip


Dip for veggies or crackers.  Its definitely an Asian-type of dip.   I only know what the ingredients are because I live in Hawaii!  My husband loved it.


Ingredients:
Won Bok Kim Chee, chopped small, about 1 cup after liquid is squeezed out
Fish cake-about 1/2 of oblong block
green onions, chopped fine
mayonnaise-about 1/2 cups or until creamy.


1.  Chop kim chee, squeeze out liquid with hands.
2.  Grate fishcake fine.  Chop if desired for a more fine texture.
3.  Chop green onions.  Mix mayo with ingredients.
4.  Add salt and pepper if desired (I had it without and it was fine).    Chill.
5.  Serve with Ritz crackers or raw veggies.

Dill Pickle Dip



1 c chopped dill pickles (squeeze out liquid)
1 8 oz package cream cheese, softened
1 8 oz carton sour cream

1.  In mixing bowl, beat cream cheese and sour cream with electric mixer until fluffy.  Add in dill pickles.  Chill.

2.  Serve with vegetable dippers, crackers or chips.

Creamy Onion Dip: prepare as above, except omit dill pickles and stir in 2 TBSP regular onion soup mix into beaten cream cheese mixture.

Cinnamon 'n' Spice Fruit Dip

I got this recipe from a Relief Society activity night, which I later found on the Taste of Home website.  The unique thing about this recipe is it is SOOOO easy.  Too easy.  And still really good.


Makes 2 cups

2 cups whipped topping (Cool Whip)
1/4 c packed brown sugar
1/8-1/4 tsp ground cinnamon
dash ground nutmeg
assorted fresh fruit

1.  In a small bowl, combine all ingredients.
2.  Serve with fresh fruit.

Cranberry Salsa






My friend Jodi and I recently threw a baby shower for our friend Angie.  Since its Christmas time, we had the theme "Santa Baby" which turned out adorable!  One food item we had was this delicious cranberry salsa.  Jodi made the snowman out of cream cheese, rolled into balls and put the cranberry salsa around the edge of the plate.  She put the crackers on another plate next to the snowman and salsa.  It was easy and so delicious.  


D. Family Cranberry Salsa:

Bag of Whole cranberries
1 can whole berry cranberry sauce
1-2 Jalapenos diced (start with one, add more if needed)
1 bunch cilantro 
6-8 green onions
1 t cumin (I always use 1 Tablespoon)
Up to 1 cup sugar (to taste)
8 oz cream cheese

boil whole cranberries until they pop open
dice jalapenos, cilantro, and green onions together in blender
put the boiled cranberries, canned cranberries, and mixed greens in a bowl.  Add cumin and sugar to taste.  Mix well.
Pour over block of cream cheese.
Serve with crackers

Homemade Pizza Sauce


throw in a bunch of fresh basil and this sauce is soooo good!

INGREDIENTS
  • 1 14.5 oz. can diced tomatoes
  • 1 small can tomato paste
  • 1 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon dried basil
  • Pinch of crushed red pepper
DIRECTIONS
  1. Combine all ingredients in food processor or blender and blend until desired consistency. I leave mine slightly chunky. You can adjust the seasonings to taste. This recipe is open to interpretation. Use what you like and it will be delicious.

Easy Cheese Ball




2 (8 ounce) packages cream cheese
2 1/2 cups shredded sharp cheddar cheese
1 (1 ounce) package Ranch dressing mix
1 1/2 C chopped pecans


In a medium size bowl, mash cream cheese. Mix dressing mix and Cheddar cheese into the cream cheese. Shape the mixture into a ball. Roll the ball in the chopped nuts. Refrigerate covered until ready to serve. Yum!  



Mel's Note:
*You may need to refrigerate mixture for a few hours after mixing ingredients, as the mixture may be too soft to make into a ball unless it has had time to harden again.

Tropical Salsa



Tropical Salsa


1 C chunky salsa (I like Pace's)

1 can (8 oz) pineapple tidbits, drained

1 medium firm ripe mango, peeled, pitted and chopped



Mix salsa, pineapple and mango. Serve with tortilla chips. Enjoy!

Marci's Spinach Artichoke Dip



For those of you who know who Marci is, we all know this dip is incredible! We have it at a lot of gatherings with friends and its always pretty much gone. So good! Marci always made it in a medium-sized crock pot. It was perfect because she would just plug the crock pot in and it would stay warm.


1 package of cream cheese
1 can artichoke hearts
1/2 cup frozen spinach- thawed and drained of water
1/4 cup mayo
1/2 cup parmesan cheese
a few cloves of minced garlic
1/2 tsp garlic salt
1 Tbsp dried basil
mozzarella cheese



Marci's instructions:
Mix everything together except mozzarella. I usually chop artichokes kinda chunky, but when in a hurry I mix it all in my food processor which makes it kind of pureed. The original recipe was to bake in the oven and put mozzarella on top near the end, but I don't know the temperature or time because I always cook it in my mini crockpot. In my crockpot it usually takes an hour, but it is at a low temperature. I add the mozzarella on top at the end(although I have made it without the mozzarella and it is still good). Yum Yum.

Cream Fruit Dip

Not sure what is going on, but I crave fruit dip all the time these days. Nope, not pregnant-I just had a baby :)


Mix together until smooth:
8 oz cream cheese, softened
1/2 c sour cream
1/4 c brown sugar
1/4 c sugar
2 TBSP maple syrup


*I used 1/2 c brown sugar instead of 1/4 c brown sugar and 1/4 c granulated sugar, just because I felt like it :)

Easiest Fruit Dip

This isn't my favorite fruit dip, but its super easy, fast AND it still tastes good :)

Easiest Fruit Dip

Blend together:

8 oz cream cheese, softened
1 jar marshmallow cream

Serve with fresh fruit.

Toffee Fruit Dip



This recipe goes out to Auntie Meg. She said the taste reminded her of a maple doughnut. Can it get any better??? Seriously?!! I don't think so. So, I'll add a picture the next time I make it because Auntie Meg and Mason ate it all. :)


4 oz cream cheese
1/4 C brown sugar (not packed)
1 tsp vanilla
about 1/4 C toffee chunks

Mix cream cheese, brown sugar and vanilla until smooth. Add toffee chunks just before serving.


*I suggest mixing in advance so the sugar has a chance to dissolve. Make sure to not add the toffee until you are ready to serve it because it will go soggy.
